In the morning, you can smell the rolls, the baking, and a delicious buffet; in the afternoon, there are enticing fresh small snacks, and in the evening a cream soup made of herbs from the meadows and perhaps braised veal with a Dijon mustard sauce.

 

That is the ultimate art of cooking at Travel Charme Fürstenhaus Am Achensee and the new concept called GenussPlus®. GenussPlus® doesn't stand for gluttony, rather for freedom: Whenever you have an appetite for a culinary delicacy from the early morning to late at night, you shall get it – and you are free to plan the day and live according to your own rhythm.

 

The region supplies the best ingredients: the finest beef, around 25 varieties of cheese, honey from mountain meadows, and fish from mountain lakes. The bread is baked in-house and it goes without saying that the pastries, right up to the pralines, are always fresh.

 

The kitchen team presents international cuisine with a strong regional flair. A mushroom risotto is decorated with shaved Tyrolean mountain cheese and a quickly broiled tuna fish comes on Asian roast potatoes.  

 

Depending on the season, fresh ingredients can be found on the menu. In May, you will be enticed with asparagus and in October is game week. Simply delicious, imaginative, and not too heavy, the hotel’s cooking sets new standards.

 

And, in order to make sure that GenussPlus® doesn’t lead to a few extra inches on the hips in spite of the lightness of the dishes, there is the spa with multiple activities – from mountain climbing to Nordic walking. That’s enough to build up an appetite again…

The man from Lower Austria is a connoisseur and enthusiast of creative cooking. His last position was as manager of the restaurant in the design hotel Madlein in Ischgl, and other highlights in his career include a position at the Hotel Sacher in Vienna and the gourmet and wellness stamp called “liebes Rot-Flüh”. 

 

Mr. Dörrich, what is East Tyrolean Henkele?

It is the finest meat that has been air-dried for six months. It is a specialty that is very similar to Bündner meat. I like to combine such delicacies of old Austrian cuisine with new more modern cooking trends – i.e. creative cooking.

Try my cappuccino made with Zillertal mountain cheese, and they you will understand what I mean.

Admittedly, it is a creation that is just as tasty as it is light. Where do you get your inspirations?

From the calendar! I like to help our guests experience the calendar year with their palates. Each month brings specific specialties that can be creatively integrated into the menu. When there are mushrooms, then we prepare mushroom dishes; in the autumn, you will find game on the menu, and in the spring, the first fresh herbs inspire us. Tyrol is full of pleasures regarding cheese, honey, and even meat. Didn’t you just have the mini-crepes of beef filet with grenaille potato moussline and turned vegetables?

Simply dreamlike! What about the famous desserts...

Of course we have such sweets! We even make our pastries and pralines fresh ourselves. I recommend our own creation – the Fürstenhaus torte. It is a type of white Sacher Torte with apricot jam, marzipan and white chocolate.
